Ingredients

  • 2.5 cups dry elbow macaroni noodles
  • 3 tablespoons butter
  • 2 tablespoons whole wheat flour
  • 1/3 cup heavy cream
  • 1/3 cup 2% milk
  • 2 cups sharp cheddar cheese, freshly grated
  • 1/4 teaspoon sea salt
  • freshly ground pepper, to taste

Instructions

  1. Cook macaroni noodles according to package instructions, drain, and set aside
  2. In the same pot you cooked the noodles in, melt butter (make sure heat is on low)
  3. Add flour and whisk quickly to combine with flour, making sure not to burn (remove from heat if necessary)
  4. Add heavy cream and milk and whisk mixture on medium heat until it starts to thicken
  5. Once mixture starts to thicken, add cheese and salt and stir until cheese melts
  6. Add noodles in and stir well, remove from heat
  7. Serve with optional freshly ground black pepper, to taste
